Soft matter can be found within a range of different fields, from food science to cosmetics and biomedical engineering. Irrespectively of the field, the same methodologies can be used to understand the physical chemistry of the system. Herein, the use of different microscopic techniques as well as combinations of microscopy and physical chemistry properties such as diffusion through fluorescent recovery after photobleaching (FRAP) and rheo-microscopy will be discussed in the context of nanocrystalline cellulose and oleogels, as examples.
Bio: Dr. Astrid Ahlinder is a researcher at RISE Research Institutes of Sweden, where she has been working since 2021. She received her MEng in Biomedical Engineering at the University of Glasgow, Scotland, and her PhD in Fibre and Polymer Technology at KTH Royal Institute of Technology in Stockholm, Sweden, under the supervision of Prof. Anna Finne-Wistrand. Her research is at the interface between physical chemistry and polymer physics, which she applies to soft matter and food systems to better understand structure-properties relationships.
