The cohomological dimension of a field is an invariant that measures its arithmetic complexity. In this talk, I will prove that the field of meromorphic functions on a Stein compact set of dimension n (e.g. on the closed unit ball in C^n) has cohomological dimension n. I will also present applications to sums of squares in the spirit of Hilbert's 17th problem.
